These zero -density palomas skip the tequila and add Jalapeño for a spicy version of the classic. This virgin paloma is then torn down with fresh grapefruit and lime juices and sparkling water for a refreshing drink without alcohol. It is great if you want something more exciting than water without a lot of additional sugar. Try my nojito (a mojito without rum) and Virgin Bloody Mary to get more mocktail recipes.

What are Palomas made of?

A traditional paloma consists of grapefruit -soda, lime juice and tequila for a cake and a sweet drink. I used fresh grapefruit juice and sparkling water in this mocktail because it is lighter and less sweet than grapefruit -soda. It is also delicious with grapefruit radio -free water like Lacroix. If you want to add tequila, use two ounces of Blanco or Reposado Tequila.

What is a spicy paloma?

A spicy paloma has Jalapenos, which I can mess with agave syrup and water in order to give it a kick more.

There are three ways to make this drink even sharper:

  1. Leave more of the seeds and core in the Jalapeño before mixing.
  2. Let the jalapeño and the agave mixture to sit for 15 minutes.
  3. Exchange the Jalapeño for a Serrano pepper.

And if you prefer your paloma without a spice, skip the Jalapeno as a whole.

How to make a large amount of palomas

This Paloma recipe makes an 8-ounce drink, but can also be easily multiplied and preferred. It could even be made in a jug for a very large format.

  1. Jalapeños, agave and water mix in a larger glass or cocktail shaker.
  2. Add the lime and grapefruit juices.
  3. Share the glasses evenly and cover soda shortly before serving.

  • If you like salt on your edge, put a few tablespoons of a wide, flat bowl. Put half of the grapefruit in the bowl and stir to combine. This does enough to salt several cocktails and you can save the remains in a Ziploc for a day or two.

  • Chop the Jalapeno (Leave the seeds and the core to make it a little sharper; remove them for mild ones) and add them to a cocktail shaker or stable glass together with the agave syrup. Use a Muddler or the handle of a wooden spoon to use the Jalapenos (basically carefully crush it to fill the taste and infuse the syrup). Then add the grapefruit and lime juices. Let it infuse it for a sharper drink for at least 15 minutes.

  • If you salt your glass, cut a small slot into the grapefruit wedge with a shoe knife and rub it along the rim to moisten it. Roll it into the salt until you are coated. Carefully tap excess.

  • Fill the glass with ice cream and pour the cocktail, Jalapenos and everything. Top with sparkle water, 1/3 to 1/2 cup or to the taste. Serve with the grapefruit.
