Why do that?
• You can make creamy, protein -rich chocolate pudding with only silk tofu and melted chocolate.
• This dessert with a no-cook is quick together and still provides a rich pudding texture.
• Simply adapt it with add-ins such as peanut butter, Nutella or maple syrup to match your taste.
Immediately after I had completed the college, I was obsessed with “healthier” dessert recipes. This meant that I often pushed avocado, beans, aquafaba and tofu, where they did not belong – browies, lemon bais cake, cakes and cookies of all kinds.
But there are a few recipes from this time that passed the test of the time. To this day I think this chocolate pudding tastes just as good, it only takes a few minutes and two (count you, two!); No real kitchen required. And as a bonus, thanks to a clever ingredient, it is full of protein – Silken Tofu!
Selection of the right tofu
I tried to use both soft and silk tofu, and both give a really soft pudding texture that melts in their mouth. The solid tofu would probably work in a pinch, but the texture could be a bit stiffer and less smooth. I would not recommend using extra solid/super solid or protein tofu.
I promise that you cannot taste the tofu in this recipe. The chocolate covers it beautifully.
Selection of the right chocolate
You can adapt this pudding to your personal preference. If you like lighter milk chocolate, use your favorite milk chocolate or piece of chocolate. I tried 72% pound plus darker chocolate bar with traders and found it quite dark, even for my taste (and I love dark chocolate). In the end I added 2 tablespoons of sugar to compensate for the dark chocolate.
For me, half -chocolate, about 50%, is a perfect middle ground that still gives them a rich, dark taste without being excessively dark.
Adjust this tofu chocolate pudding
I think this pudding would also taste fantastic if a few tablespoons of peanut butter are installed with the chocolate. Or you can leave out the chocolate for an peanut butter -Tofu -Pudding (some jam for a funny view of PB & J).
Every strong taste such as Nutella, Biscoff, Black Sesame or Pistachien butter could also work for a reef on this pudding recipe.

6 Ounce Half wood chocolate chips, fries or chopped

1 (16-Ounce) block soft or Silk tofu, drainage

1/4 teaspoon Kosher salt, optional

Optional toppings: Whipped creamShaved chocolate, sprinkle cocoa, fresh berries

Melt chocolate:
Melt the chocolate in steps of 30 seconds and stir into the microwave after each increment to ensure that it does not lower. (You can melt the chocolate over a double kettle.)

Mix the pudding:
As soon as melted, combine chocolate, tofu and salt in a powerful mixer or a food processor. Mix until you are smooth and lush, and make sure that the sides stop and scrape off. Try the pudding to make sure it is sweet enough (if necessary, you can add one or two tablespoons of sugar, honey or maple syrup).

Cold and serve:
Cool for at least 1 hour or to cooled. Serve with all the optional coverings you like! This pudding is best kept in an airtight container in the fridge for up to 1 week.
