Straight from Stewart’s cookbook Entertaining (Her first-ever cookbook set, re-released November 4th), these oven-braised pearl onions are a deliciously savory snack that seems elegant and complex, but is humble in nature. This fall side dish requires just three main ingredients and is an easy solution to round out your Thanksgiving menu.
All you need to make this delightful recipe are 4 pounds small white cooking onions, a knob of unsalted butter, ½ teaspoon white pepper, and 1 ½ teaspoons salt. As an optional garnish, Stewart recommends 2 teaspoons chopped fresh parsley to add a touch of color to the dish.

Start preparing the side dish by briefly cooking the pearl onions in a pot with water and a teaspoon of salt (1 minute and 30 seconds should be enough) to loosen the skin and make them easier to peel. After peeling, cut a small “X” into each root end so they cook evenly. Spread the onions in a single layer in a 9-by-13-inch baking dish, brushing each with butter and seasoning with salt and pepper before covering with buttered parchment paper or aluminum foil and placing in a 350°F oven.
After 30 minutes, the onions should be nice and tender; Remove the lid and bake for another 10 minutes until lightly browned. Serve with a side dish of your choice, but be aware that the plate will be empty in no time!
