This baked oatmeal was my breakfast I did three times this month! It falls healthy and delicious with blueberries.
We spent August in our house in Michigan, where we had a steady stream of guests. My mother, sister, close friends … every time someone comes into town, we go Blueberry picking! So … my refrigerator? Currently full of blueberries. 😊
I love eating them on the handful and throwing them in salads. But this month was my preferred way of using it in this oat flakes. I’ve already done it three times and don’t see myself so soon.
Here is why I love this baked oatmeal recipe:
- It’s super satisfactory. Whole rolled oats, almond butter, pecans and fresh fruit fill these oatmeal baking with fiber, protein and healthy fats. A slice holds me a little until lunch!
- It tastes delicious. It is crispy at the top, soft in the middle and full of fruity, nutty taste. In addition to the blueberries, I add a banana with a foolish point of view, which gives it a subtle banana bread taste.
- You can make it at the front. This recipe lasts up to 4 days in the fridge! I love to be able to prepare a disc for a quick breakfast for a quick and easy meal.
