I am a long-time fan of the fruit and vegetable department at Trader Joe’s, which is perfectly portioned and priced. I am suspicious of food prepared and skip the prepared garlic or carrot sticks. The Mirepoix from Trader Joe is good, however. After many years of court proceedings, the onions are never bitter, the celery never limp and the carrots are still crisp.
It is far more practical to provide a container with prepared Mirepoix than onions, carrots and celery. If you only need enough for Mirepoix, buying the raw trio often costs more and risks that spoil in the fridge. And even for those of us who love to cook again from scratch, I do not see this as a fraud, but as a wise abbreviation. Cutting off the preparation time makes it much easier to get dinner on the table.

How I use traders Joes Mirepoix
Mirepoix is usually the first ingredient that goes into the pot to fry in fat like oil or butter. Additional ingredients are layered above to achieve deep taste. With Mirepoix from Trader Joe, no preparation is required. I throw it out of the container into the pot. However, I prefer to bring the container to room temperature before using it to accelerate the browning.
Regardless of whether I start a lavish autumn soup like Italian wedding soup or butternussing, Mirepoix is always an important ingredient. They are intended in sauces such as classic espagnole sauce or bolognese.
