This bright, brothy SOPA de Lima Is light and yet soothing and the bite of butter -like, creamy avocado at the top are really the best part!
This recipe from SOPA de Lima is something that makes my mother -in -law Gogo all the time. She has made this recipe from Austin’s former Cafe Tortuga restaurant for years. Take a look at this newspaper excerpt!
While the original recipe is supposed to die, I have a few adjustments such as the use of rotisserie chicken, broth and tomatoes bought in the store in canned goods in order to make this recipe easy and possible for dinner a week. It is absolutely delicious, full of taste and one of the soups of our family.
Ingredients:
- Extra virgin olive oil
- White onion
- Green pepper
- Jalapeños
- Garlic
- Kosher salt
- Black pepper
- Fire -assembled tomatoes canned
- Chicken broth
- Dried oregano
- Laurel leaves
- Shooted cooked chicken I use rotisserie
- limes
- Fresh coriander
- Tortilla chips optional
- avocado optional
Step by step:
Step one: cook the vegetables
Heat the oil in a large saucepan or Dutch oven over medium heat. Add onion, peppers, jalapeño, garlic, salt and pepper and cook while stirring until the vegetables are tender.
Step two: Add the tomatoes, the broth and spices and simmer
Increase the heat to medium height. Add the drained doses from tomatoes, broth, oregano and laurel leaves, stir and bring them quickly. Reduce the heat so that it cooks slightly, covering in medium heat and fusion of the flavors for about 10 minutes.
Step three: Add the chicken and lime juice
Stir in the chicken and lime juice and simmer for another 5 minutes.
Step four: garnish and serve!
To serve in shells and garnish with coriander, some shredded corn tortilla chips and the seasoned avocado.

It does! I love to make a double batch and freeze half. Trust me, you will thank you later!
Under no circumstances! You can use any cooked chicken you like, but I think that the use of a rotisserie chicken makes this recipe super easy and easy.
As you can say, this soup has been a family favorite for many years, and I hope that she will also be one for her family! Let me know what you think.

- To freeze to freeze, let the soup cool completely and then transmit them into airtight containers or freezer bags and leave some space for the expansion. Label and date the containers before placing them in the freezer.
- To overturn, move the container in the fridge and let it open overnight, or use the breakdown of the microwave for a faster option. Warm the soup or the stew in a saucepan over medium heat over medium heat and stir it occasionally until it boils at intervals, or switch between the in between until it is heated.
- If you feel that the contents of the soup (ie pasta, rice, etc.) take up the majority of the liquid, you can add more broth to 1 to 2 cups to rehydrate the soup and bring it to the desired consistency. Try and adjust the spices as required.
