When I grew up, my mother grabbed my school dinner every day. From the first class to my first college year (yes, really) … she sent me off with a well -rounded meal. I can remember my first lunch box on the front and consisted of tin-in-in-in-one containing a PB & J-Sandwich on wheat, cutting fruits in a tiny orange tupperware container and 3 cookies.
I never knew how it was, without lunch, or another meal for this matter. If I have ever forgotten my lunch, you should better bet that my mother drove to school to give them off. Even now it should be one unusual Crazy busy day for me to be distracted enough to skip lunch.
Unfortunately, this is not the case for many, many children around the world … what today’s contribution is. Oh, and I also have a small recipe … Typical lunches for me and Jack are shown in this post. I love everything and everyone with avocado, he loves sandwiches with almond butter.

White bean spread

- I can drain and wash beans from Cannellini
- 2 tablespoons of olive oil
- 2 cloves of garlic
- 2-4 tablespoon of fresh lemon juice (approx. 1 lemon)
- About ½ teaspoon of lemon peel
- Salt & pepper taste
- A little water, if necessary to thin
- Optional: Throw herbs: rosemary for winter, basil for spring etc.
- Puree all ingredients in a food processor or a mixer. Try and adapt spices. Slather bread and serve with sandwich fixations of your choice. Mine (picture) is avocado, arugula and hemp seeds.
