A list of soup recipes in the notes app of my phone is an autumn tradition that I look forward to every year. As soon as the weather gets cold, nothing sounds more satisfactory than a hot bowl soup, stew or chili.

While slowly cooked soups that simmer on the stove all day are great for weekends, I need quick options to meet our full schedule during the working week. Ree Drummonds creamy tortellini soup is a recently carried out discovery, which will be a permanent component on my annual soup -Bucket list.

With only seven ingredients and made in just 15 minutes, it is a satisfactory rich bowl that everyone revered in my family.

Let’s not forget the taste. While the recipe is very Basic, it is not short for the taste. My family enjoys the wealth that the cream gives the soup. I also like it to make the black pepper a bit difficult – we are loyal fans of Cacio e Pepe in our house (another recipe for quick dinner, which I keep in my buttocks), so that a few additional meals of this soup give a similar atmosphere.

Finally, it is a recipe that I can always spice up. I will often be grilled chicken breast in the remaining chicken or produce that need to be used. When it comes to opportunities, this soup really knows no boundaries.

How to make creamy tortellini soup

I could make Rees soup with your eyes closed – that’s how easy it is.

Simply bring the broth to the stove to the cook and throw the frozen vegetables into it. As soon as the broth returns to cook, add the fresh tortellini and cook them until Al Dente according to the instructions of the pack. Stir in the cream shortly before serving and taste with salt and pepper.

Don’t forget the toppings. Ree recommends to garnish every bowl with a handful of croutons, a spacious pinch of shaved parmesan and a splash with extravires.

Opportunities to update this soup

This simple soup is delicious, also serves as a fantastic basis that can be easily changed. Here are some of my favorite tricks to bring this soup to the next stage:

  • Set up the protein: Consider the soup to add 2 cups of chicken chicken chicken or crushed chicken. The Italian sausage would also make a nice, spicy addition.
  • Tinker with the tortellini: REE demands good, old-fashioned cheese tortellini, but you can experiment with any taste that your household enjoys. (I personally think spinach or butternusskurbis would be wonderful.)
  • Layer taste: Add some oomphe with a little help of your spice cabinet, such as a dash of Italian spice, dried oregano, garlic powder or chillary flakes. You could also stir in some fresh herbs to give a freshness just before serving.
  • Pack vegetables: If you are looking for a nutritional value, add green beans, paprika, cut zucchini or a can of dulled tomatoes. All greens would also be nice, like a few handful of fresh chopped spinach or kale.
