If you have been here for a while, you know that I am only concerned with simple, fresh recipes, especially when the summer products seem. The Peach cucumber salad It has become one of our points of contact when the weather is warm and the peaches are completely ripe. It is crispy, juicy, a little sweet and super refreshing. Basically everything you want on a hot day.
We have two peach trees in our farm. So if you burst fruits in front of tire, this salad is repeated. It is one of my favorite methods to use these juicy summer peaches well. It is such a simple salad, just slices, whisk, throw and they are done!
It’s such a simple salad, but the flavors really throw. Sweet peaches, cool cucumbers, fresh herbs and this spicy honey-lime dressing. So good!
It is also super versatile. It fits perfectly with grilled chicken, salmon or burgers and supplements with every summer grill or picnic. I also love that it was spooned over crusty bread with beaten feta or beaten cheese cheese. You can also pull the salad up with your favorite grasses or grains for a slight lunch.

Ingredients (with helpful notes)
For the salad:
- Peach: Choose mature but firm peaches for the best texture and the best taste. If you don’t have peaches, nectarines also work.
- English cucumber: Sliced thinly into slices to get a nice crunch without too many seeds. No need to peel!
- Green onions: You add exactly the right bite without overwhelming the salad.
- Herbs: Fresh mint and basil! The combination is so good!
For the dressing:
- olive oil: Use a high-quality olivic oil oil olive oil for the best taste.
- Fresh lime juice: Adds Zing and keeps the salad alive.
- Honey: A hint of sweetness to compensate for the acid.
- Garlic: Fresh the garlic with a grate Micropan So it mixes well.
Tips for the production of peach cucumber salad

For the salad:
- 2 Peach, displayed and cut
- 1 English cucumber, thinly cut
- 2 Green onions, sliced
- 3 tablespoon Mint -chopped mint
- 3 tablespoon chopped basil
For the dressing:
- 2 tablespoon olive oil
- 2 tablespoon Lime juice
- 1 tablespoon Honey
- 1 Little Nelke Garlic, grated
- Kosher salt and black pepper, taste good

Combine the peaches, cucumbers, green onions, mint and basil in a large bowl.

Whisk oil, lime juice, honey, garlic, salt and pepper in a small bowl.

Pour the dressing over the salad and throw gently. Surcharge.
How to store: This salad is best enjoyed, but you can keep leftovers in an airtight container in the fridge for up to 1 day. Only know that the peaches and the cucumber will soften a little while sitting.
