For the salad:

  • 1 ((12 to 14 inches) ENglische cucumber, cut into 1-inch pieces

  • 2 Fresh peaches, cut into 1-inch pieces

  • 1 limeBred and juicy

  • 2 tablespoon Avocado oil or olive oil

  • 1 tablespoon Honey

  • 4 large fresh Basil leaves and more for garnish

  • 1/8 teaspoon kosher Salt or taste

  • 1/8 teaspoon freshly ground Black pepper or taste

  1. Prepare the vegetables:

    Put the chopped cucumber and peaches in a large bowl.

  2. Make the vinaigrette:

    Combine the lime peel and juice, oil, honey, basil, salt and pepper in the bowl of a mini kitchen machine or a mixer. Impulse until the basil is finely chopped and the vinaigrette is completely emulsified.

  3. Put on the salad and serve:

    Pour the vinaigrette over the peach and cucumbers. Stir evenly.

    Transferred to a serving plate, garnish with torn basil leaves and serve immediately.
