My 1-Ingredient Upgrade for the Creamiest Hummus (It’s Free!)

My 1-Ingredient Upgrade for the Creamiest Hummus (It’s Free!)

Key Takeaways

  • If you produce hummus, it is easier, fluffy and creamier.
  • Mix longer than you may think-at least five minutes and scratch the pages for an ultra-smooth texture.
  • This trick fits particularly well with hummus, which was made from chickpeas in doses and corresponds to the creaminess of homemade dried chickpeas.

We are pretty much never without hummus in my house. The lush dip is an almost daily snack for my husband, paired with pita or pretzel chips and an everyday lunch component for me, regardless of whether I spread it on a avocado toast or generously on a cereal bowl.

If we are too short, we take one or two tubs from the grocery store, but I have found that if I have a few additional minutes on a Sunday, I can easily open hummus for the week with a can of chickpeas, tahini, lemon juice and garlic.

My homemade hummus was always good, but never great until I discovered the most brilliant trick to improve it: Add an ice cube to the food processor. This small (and free!) Supplement makes the hummus lighter, fluffy and so creamier.

Add an ice cube to your homemade hummus

Regardless of whether you use chickpeas that you have cooked yourself or have chickpeas in doses when producing hummus, adding an ice cream cube significantly improves the texture. This applies particularly to hummus with chickpeas in cans, which is more convenient, but is rather a little less creamy than hummus with chickpeas that you have cooked yourself.

Combine the tahini and olive oil in a food processor for this trick. Then add the garlic, chickpeas, lemon juice, water and salt, as our recipe says. Before you close the lid, add an ice cube. That’s it!

Process the humm as specified and have it mixed for longer than you may think, at least five minutes or longer -to remove the sides of the bowl to integrate everything that climbs up the pages.

Why does that work? The ice whips and ventilates the mixture while mixing, which leads to smooth, fluffy hummus. And the longer you process hummus, the better, because the more air is installed in it.
