I was initially attracted to the white almond cake because I love almond everything: Danish, cake, a tube marzipan. Then I discovered that they announced every dinner party and Potluck: “This is Abraham Lincoln’s favorite cake.”
This recipe is also a surprising hit when children really go through one in the USA, like my friend’s six-year-old son, who is currently fascinated by this guy on the penny.

What I thought of Mary Todd Lincoln’s almond cake
I found this cake surprisingly elegant and came from such modest ingredients. The almond writers give a fun crunch and the egg whites with beaten egg keeps things light. (How did Mary Todd ever get stiff peaks on protein? Rotary egg bats were only invented in 1884.))
This almost bread-like sponge quickly visits a sweet drizzle made of lemoncello or amaretto liqueur and goes wonderfully with a dash of whipped cream and a cup of coffee.

My tips for baking this white almond cake
- I will never have the patience to seven flour and baking powder three times. I whisked it instead – and I don’t regret anything.
- Search for packages with splinter almonds in the back section of your grocery. And instead of hacking the almonds with a knife, I put them in my mini kitchen. I pulsed the slipper almonds for a few seconds until they looked like coarse sand.
- To prepare my bundle pan, I pushed butter into every corner and angle and then dusted it off with flour before I added the dough.
- As soon as the cake was finished, I let it cool on a rust for 15 minutes, a knife pushed around the edge and turned it over an hour on the rust before removing it from the pan.
- To serve a ball of vanilla häagen dazs (how how Ina garden does), put it on your plate and put the almond cake on it. Then add fresh berries and whipped cream!
