I use a lot of almonds for baking. You are in my favorite recipe for orange -colored biscotti and the traditional Italian wedding cookies of our family. If I have too many buying or a partially open bag, I am never sure whether almonds are in order in the pantry or whether I should put them in the fridge or freezer.
I checked Lyndsay Bashore, a research scientist from Hormel Foods, to whom ownership Plant vessels brand. She says that the best way to store almonds depends on when you want to use you.
“Save almonds in a pantry is completely acceptable if you plan to consume the nuts relatively quickly,” says Bashore. “However, if you expect it to take some time to end it, cooling or freezing can help extend freshness.”
How to pack almonds for storage

How long your almonds will remain fresh depends on several factors, says Bashore:

“We recommend consuming the open nuts for optimal freshness within a week,” says Bashore. “If this is not possible, cooling or freezing is a good option.”
How to find out whether almonds have become bad
If almonds have been saved for too long, they can be rancid. “Rancid nuts usually have a noticeable, repulsive smell-like like old oil,” says Bashore. “You can also taste dry, stale, taste bitter or have an unpleasant taste.”
If you are not sure whether your almonds are still good, the USDA recommends cutting one in half. It should be solid white. If it has a yellow shimmer or the texture of a honeycomb instead, it is no longer at its peak and should not be eaten.
Buy whole almonds for the freshest almonds that last the longest and wait to chop or grind them until they are ready to use them.
