This beauty is full of pepper -rucola grass, hearty Halloumi cheese, sweet peaches, crispy corn, cut directly from the cob and one of my favorite associations of all time.

You know that I am always on the mission to create the next best salad of the season. I do this at home every week when I want to make our salads more exciting. Regardless of whether we eat it as a starter, as a page, for a vacation or even lunch, I want to make a salad that I absolutely freaked out.

One that I can’t stop thinking about.

One that checks all the boxes: taste, crunch, all the texture, saturation, seasonal and more.

Halloumi is an ingredient that I always worship but do not use enough. It is super easy to cut and throw directly on a hot grill. I also throw the corn directly onto the grill. It’s so easy.

This Coriander Limettes Dressing is one that I use in many ways. Think of salads, as a marinade, for fajitas and more. It is very tasty and easy to make. I use my favorite kitchen appliance to do it: the nutrient!

Throw all ingredients directly This mini mixer Makes this into a child’s play. I will make it a day or two in advance and it stays great in the fridge. Just shake it or whisk it before using it.

The Herby Cztrus edge also tastes very fresh and light. It coated everything perfectly without being difficult. Ideal for summer!

I find this salad so satisfactory and it doesn’t take another matter – but if you want more protein, go with grilled chicken. Or even crushed rotisserie -chicken. Just just.

  • 4 Ears corn on the ball
  • 8 Ounce Halloumi cheese, Cold, cut lengthways
  • 2 Peach, displayed and cut
  • 6 to 8 Cup Baby Rucola Greens
  • Kosher salt and pepper
  • cup chopped pistachios
  • Fast pickled onions, To topping

Coriander lime dressing

  • Combine the lime juice, honey, garlic, coriander salt, pepper, pepper flakes and olive oil in a mixer or kitchen machine. Mix up to combined and smooth (some coriander pieces can stay). Remains stay in the fridge for a few days! Store it in a sealed container.

  • Heat the grill up and make sure it is hot. Make sure that the Halloumi cheese is cold directly from the fridge.

  • As soon as the grill is hot, add the corn ears directly to the grids. Cook for 3 to 4 minutes before you turn. Repeat this until the corn reaches the desired char. Depending on the size, I usually grill about 8 to 12 minutes. As soon as the corn has cooled enough, cut it off the cob.

  • Place the Halloumi cheese directly on the grids. Use a spatula after 1 to 2 minutes to gently turn it around. Continue grilling 1 to 2 minutes. Transfer the Halloumi to a plate.

  • Throw the rocket greens with salt and pepper in a large bowl. Add in corn, Halloumi, peach panes and pistachios. Drizzle and reject with a few spoons of dressing. Add the pistachios and pickled onions.

  • Serve with more dressing! Enjoy!
