Spinach and feta are a match in heaven – or rather in Greece. Since I was in love with the combination of mineral, slightly bitter spinach and salty, creamy feta in a long Gongic Greek restaurant in Chicago in Chicago in Chicago in Chicago in Chicago.
I love Spinat cake, but I am not always ready for the effort to layer all these butter -like phyllo, especially in summer. Instead, I use the same combination to create a fast and simple pasta dish that can be a vegetarian main or a perfect side of grilled meat.

A classic taste combination
The mating of grass -covered spinach and lively feta has a long history in Greece. The Greeks for Wild Greens, called Horta, comprises nettles, dandelion, cress, mustard green, rocket, purlane, lamb quarters and other leaf plants.
Making cakes and other dishes with Horta and Feta is a long tradition. If you use mild, sweet cultivating spinach instead of Horta, you don’t have to search for dinner.
To make my pasta-feasting version of Spanakopita, you will make a puree made of spinach, garlic, oregano, feta and olive oil and address it with lemon juice. This light green sauce draws the pasta. It is delicious with warm penne and served or met immediately and served as a pasta salad.
I love pasta in tomato sauce as well as the next person, but sometimes it’s good to upgrade things. This is a bright and hearty alternative that the whole family will please, and the chilled version is exactly what you want on a hot day.
Tips to make this simple spinach feta pasta
- Choose your feta: In this dish I am on creamy feta like Valbreso, but it is not always available. Mt. Vikos is a serious contender and easier to find. I prefer to crumble the block itself into larger pieces, but if you want to take a tub with crumbs, work here.
- Shortly before serving: If you cool this dish, you will refreshes with a small splash of olive oil and a dash of lemon juice.

2 1/2 Cup (Half of a 5 -unzen package) Baby spinachRinsed and turned dry

1 teaspoon dried oregano

1/2 teaspoon SaltPlus more for pasta water

1/2 teaspoon fresh ground black pepper

8 Ounce Fetadivided

1/4 cup Olive oil outdoor virgin

1 tablespoon Lemon juice

1 pound Penne pasta

1 cup Gravy domathalved

1/4 cup thinly cut red onions

Cooking water:
Bring a large pot of water to a boil through high heat.

Make the sauce:
Add the cloves of garlic to a kitchen machine and process them until they are chopped off. Scratch the sides of the processor shell and add the spinach, oregano, salt, pepper and 1/4 cup of feta and reserve the rest. Edit up to smooth, about 30 seconds. Scratch the bowl again, add the olive oil and lemon juice and process it until it is installed for about 30 seconds.

Cook the pasta:
As soon as the water boils, season it generously with salt and cook the pasta to al dente according to the instructions for the packaging. Drain well.

Combine:
Transfer the drained noodles back into the pot. Add the tomatoes and onions and crumble into larger pieces in the remaining feta. Scratch the spinach mix over the pasta and mix well. Serve immediately.
Remains can be kept in an airtight container in the fridge for up to 3 days.
