What you need

- Fat -Free Free Milk – No condensed milk! Vapilized milk is unsweetened.
- Lite coconut milk – for coconut quality without all the coconut fat.
- Sugar powder – This dissolves directly into the coconut wood mixture, so that you first have to make a simple syrup.
- Coconut extract – The extract is important here – it really brings this coconut taste home!
- Cinnamon – just add some warmth a little.
- Sheered sweetened coconut – If you are not a fan of the texture of crushed coconut, you can skip this.

Tips and variations
- Stir the ice on the stem a few times. You do not want the crushed coconut to settle on the bottom of the mixing bowl. So stir them after pouring them into 2 or 3 ice pop forms to redistribute them.

- Know how to lure stuck ice cream on the stem. If you have problems getting the pops out of the shapes, you can adjust the shapes in a bowl with hot water for a few seconds or run under the tap. This loosens the ice on the stem so that they are easier to remove.
- Make them chocolates. Drizzle the coconut track with Magic Shell before serving with your coconut.
Correct storage
It is best to store homemade coconut track in the shapes to keep them fresh. If you have to use the shapes again, you can remove the frozen pops and wrap each individually in plastic film and store them in a freezer bag or airtight container. You will stay in the freezer for up to 2 months.

I am easily obsessed with coconut. The smell, the taste, in drinks, desserts or frozen! Although I love coconut all year round (as you can see from my coconut -curry butternut and cubes and coconut macoons), I long for! When I was younger, I spent many summer in Puerto Rico with cousins and remember how I enjoyed delicious coconut spaletas to cool down in the heat. This coconut railway is a relieved version that is as tasty as the ice on the stem, which I remember from my childhood.
