This chopped wedge salad has all the aromas of a traditional wedge lettuce, all hacked and thrown into an incredible blue cheese dressing. It is so crispy and crispy.
Holded salads are the salads that have suffered me to salads. It’s the truth! It is only something if you get a bite of everything on this one fork. It is so satisfying. Holded salads usually have a lot of texture and that is no different.
At the same time it is super easy. Eisberg, tomatoes, bacon, blue cheese. This is really! Sure, we have a dressing and a few fresh herbs, but these are the big ingredients. The most important.
Now I know that the classic wedge salad had creamy blue cheese dressing.
BUT. I don’t love creamy dressing from the start. And in summer it just seems … heavy and hot.
It is no secret that I need lively, salty vinegar in my life. It is my absolute favorite taste combination and homemade salad dressings are my life.
So! Instead, I did my blue cheese cheese. It’s perfect. Oh my word.
Really perfect.
First of all, the dressing contains blue cheese, so it shakes and mixed, and a slightly creamy texture is accepted. Almost like emulsified. Second, it has fresh herbs that are so beautiful and refreshing in summer.
The vinaigrette keeps the salad a little easier. It also keeps the bacon crispy and the iceberg crispy! It is not soaked in a creamy dressing, which gives it a little persistent force. Plus – the taste. Ohhhh the taste.
I am a nut and could probably drink this dressing. Take at least a spoon!
The nice thing about this chopped salad is that you don’t have to do a lot of work in order to even get this size. The bacon is already in Crumbles. The iceberg falls apart as they cut into slices. The tomatoes are really the only ingredient that requires some minced capital work: quarter or halve them depending on the size.
Everything goes into a bowl, thrown into the dressing and boom! It’s done.
On a super hot day I could eat that for dinner. It is a great BBQ salad. Also an excellent side salad or a Potluck dish – just drizzle on the dressing shortly before serving.
PS The vinaigrette makes a little extra and you can use it for everything. Chicken, steak, vegetables, pasta salads, grilled bread – work.

Heat the chopped bacon in a pan over medium heat. Often stir until the bacon is crispy and the fat is rendered. Remove the bacon with a slotted spoon and put it on a paper towel to let go of excess fat.

Chop the head of the iceberg lettuce and put it in a bowl. Throw with a large pinch of salt and pepper. Add the cherry tomatoes, bacon and blue cheese. Drizzle and reject with a few spoons of dressing. Sprinkle on the fresh chives.

Serve with an additional dressing to drizzle!
Blandics cheese -vinaigrette

Whisk the vinegar, garlic, chives, honey and dijon. Stream in olive oil as they are emulsified. Stir in the blue cheese. This remains great in the fridge for 2 to 3 days.
