Although sweeter options can hit the spot, we’re big fans of savory oatmeal: breakfast dishes that contain comforting oats as well as some unusual ingredients like cheddar, cabbage and eggs, or tomatoes and sausage. As we prepare for the fall season, it’s important to remember that there’s more to a comforting, filling breakfast than just pumpkin spice-flavored baked goods. That’s why we were thrilled when we came across a clip from 2010 of actress Cameron Diaz raving about her own favorite savory oatmeal recipe Oprah.
“I love to eat, so I learned to cook,” Diaz explains the clip after host Oprah Winfrey asked her if she was good at cooking. “I love cooking. I’ve cooked all my life. My mother taught me that.”
The Back in action The actress adds that there is one meal that is particularly close to her heart: breakfast. “I make a really great breakfast. The breakfast is really good. I make a really great porridge – a hearty porridge.”
To make Diaz’s delicious-sounding, savory oatmeal, you’ll need a few simple ingredients: chicken broth, water, oats, vegetables (whichever you prefer), leeks, shallots, eggs, butter, and ponzu sauce. You don’t know Ponzu? Diaz describes the condiment as “a Japanese citrus soy sauce.”
Check your brand of oats for cooking instructions and replace the recommended cooking liquid with an equal amount of Diaz’s favorite mix: “I do half chicken broth, (half) water,” she says, “and I make it al dente, so it’s almost like a rice.”
“You sauté whatever vegetables you want with leeks and shallots, and I add a little egg white on the side,” she continues. “Then I put a lot of butter in the oatmeal, and then you add the vegetables and eggs, and then put ponzu sauce on top.”
This hearty breakfast mix sounds perfect to us, especially since vegetables like spinach and kale can help lower blood pressure, improve digestion, and support strong bones. Additionally, allium vegetables like leeks and shallots add tons of flavor and a few other nutritional benefits. Egg whites also provide a lot of protein and are therefore a great ingredient for your breakfast.
