One of my preferred ways to consume summer tomatoes is this simple recipe for tomatoes bruschetta – perfect as a simple starter or side dish.

If you are looking for a fresh, tasteful way to enjoy mature summer tomatoes, this simple recipe for tomatoes bruschetta is a must. Juicy tomatoes are thrown with garlic, olive oil, red onions, balsamic vinegar and fresh basil and then spooned over roasted crispy bread to get the perfect bite. It can be done quickly, only requires a handful of ingredients and works wonderfully as a starter, light lunch or side dish for pasta, grilled meat or seafood. It is one of the best ways to use fresh summer tomatoes!

How to make bruschetta

Making bruschetta at home is quick and easy. Like: How:

  • Gather and serve – Spoon the tomato mixture just before serving over the bread so that it remains crispy. Drizzle with a little more olive oil or balsamic glaze if necessary.
  • Prepare the tomatoes – Cube freshness, mature tomatoes and throw them with olive oil, balsamic vinegar, red onion, chopped garlic, fresh basil, salt and pepper. Let the mixture sit for 10–15 minutes so that the flavors merge.
  • Roast the bread – Cut a baguette or Italian bread and easily spread each side with olive oil. Toast in the oven or grill until they are golden brown and crispy outside, but are still tough inside.
  • Grate with garlic – Grip the warm toast with a cut clove of garlic for additional taste.

Other ways to use the tomatoes: I love to use them via grilled salmon bruschetta with avocado, grilled bruschetta chicken or even bruschetta castle.

How to eat

Nobody wants a damp bruschetta – the key is in this perfect contrast between the crispy, roasted exterior and the tough bread inside, crowned with cool, juicy tomato mixture. Serve the bread freshly roasted for the best texture (or for a beautiful char) and the tomato, which is grilled at room temperature or chilled. Gather just before serving so that each bite stays fresh and crispy.

Make a tip

You can do the tomato salad up to one day in advance and keep it in the fridge so that all flavors can really be combined. Then when the time comes, only your bread is to be cut and roasted, and voila!

Serving size: 1 Cut the bread with tomatoes into slices

  • Combine tomatoes, chopped garlic, red onion, vinegar, oil, salt, pepper and basil. Set aside to merging the flavors for 10 minutes.

  • Cut the bread into 1/2 inch thick slices.

  • Place on a tray and spray slightly with olive oil.
