Alton Brown’s 3-Ingredient Side Dish Is My Forever Favorite

I have cooked the full Thanksgiving spread for my family in the past 15 years. As a rookie, I put far too much time on the sides – I would spend hours building up on complicated worships that are ultimately lost in the shuffle. Over time, I started to recognize that there is less more when it comes to designing a rounded and realistic holiday menu, and this lesson began with a simple sweet potato dish from the culinary legend Alton Brown. Since, Alton Brown’s sweet potatoes have become a year -round side dish that I do at least once a week.

He assembled the dish in 15 minutes – everything they do is to crush the sweet potatoes with a little butter and chipotle in Adobo. It was the only side dish where there were no leftovers.

My favorite part of this recipe is how well it balances every meal. It has exactly the right amount of warmth to clean your palate. In addition, it is a chameleon for dinner-es to match every dish with which it is served. I love it, served it with steak, wood roasts and roast chicken.

How I do Alton Browns Chipotle -sweet potatoes

The court couldn’t be easier. First peel two large sweet potatoes and cover them with cold water. Add some salt and bring the water to cook. Then reduce to a boil and cook until the potatoes are soft. Drain the sweet potatoes and bring them back into the pot with a generous amount of butter; I use three tablespoons. Melt the butter with the residual heat into the potatoes as you crush them.

Finally, simply fold one or two chopped chipotle chilli in Adobo together with one or two teaspoons of Adobo sauce. You can add more or less depending on how sharp you like things. There is no honey in Brown’s original recipe, but I think one or two teaspoons of honey really rounds it around.

How I optimized this recipe

As with most of my favorite recipes, I have fit this dish a bit over the years to fit my family’s taste better. I exchanged normal butter for cultivated, which gives a pleasant tang and a pleasant wealth. I switched the heat from Smoky Chipotle to fruity Kalabrian chillies and installed a little hot honey to compensate for things.

I started making this simple side dish so often that I decided to make a lot of composed butter that I could simply lure into the sweet potatoes as soon as they were fork. I leave eight ounces (two sticks) softly cultivated butter in my stand mixer equipped with the paddle attachment and add three tablespoons of crushed Calabrian Chile Peppers and two tablespoons Mikes Hot honey. This is mixed in the mixer until everything is well combined. Then I dune it in the middle of a parchment paper sheet and shape it into a tree trunk before I keep it in the fridge that is densely packaged.

If it is stored properly, it takes about two weeks in the fridge and in the freezer for up to three months. If you are sensitive to heat, you can set the number of chillies according to your wishes. The same applies to the honey – Wapig with a simple honey if it fits your palate best.

If you want to make the smashed sweet potatoes, simply cut about three tablespoons of this composite butter and crush them directly into your cooked sweet potatoes. I promise that it will quickly become one of your favorite inserts!
