This grilled Taco chicken with Frito herb salad is my new favorite meal! It is all you want: refreshing, crisp, crispy, satisfactory, simple and more. The coleslaw is delicious and the chips add such a perfect crunch. The chicken can be mixed directly into the side and the combination is so good.
Fresh, light, spicy and fun to eat.

My cousin Lacy and her mother-in-law found this recipe for frito herb salad and we couldn’t stop thinking about it. And talk about it!
It sounded so good. I’m not that big a frito fan, but I couldn’t get it out of my head.
It somehow reminded me of this old Dorito salad (which I half-wash), in which they soak everything in a bottle of Catalina dressing and chop the bag of Doritos. I love it and hate it as best as possible.
This coleslaw sounded like an even better version of it. It is no secret that I am such a big herb salad – I will turn everything out of everything so that I can serve it with everything. The texture and crunch are unsurpassed. And it is an entertaining way to spice up a “salad”.
The original version, which Lacy found used, used bacon and a creamy dressing with Taco. I knew I didn’t want the bacon and had to put my own shoot on the salad and dressing. My coriander lime dressing is always a hit, so a creamy version was fine. And here we are!
The best new dinner idea that you will all love. And yes, you need a bag of Fritos for it.
First the grilled Taco chicken. These are chicken legs on which I use a few taco-inspired spices and then take up the grill. Super simple and so tasty.
Next the coleslaw. You will want to eat that over and over again! It is crispy and crispy, but light and refreshing and tastes absolutely fabulous. (more…)
