This Caprese-Kicherle Salad is a fresh, protein and fiber-packed, vegetable turn on the classic Italian favorite. It combines creamy mozzarella pearls, juicy cherry tomatoes and fragrant fresh basil with hearty chickpeas for a satisfactory dish. A simple balsamic vinaigrette combines everything together with a spicy sweet finish. It can be prepared quickly, colorful and with a summer taste.

The creamy avocado fits perfectly with hearty chickpeas for a vegetable basis. Without cooking and minimal preparation, it is a perfect fast lunch or dinner.

This chickpea cubbastalate has carrots and cucumbers and gives it a quartet of ingredients that all start with the letter “C”! This chopped salad is loaded with fiber and prebiotic chickpeas and promotes a healthy intestine. Green cabbage keeps the color lively and fresh, although the red cabbage works just as well.
No-Cook White Bean & Spinat Caprese Salad
This slightly white bean and spinach -Caprese salad has the classic combination of juicy tomatoes, creamy mozzarella, fragrant basil and spicy balsamic vinegar, but gives the mixture delicate white beans and fresh spinach. If you do not find Mozzarella beads, cut or tear a fresh ball made of mozzarella into bite-sized pieces instead. If you like your salad with a little kick, try the spinach against Rucola.

The creamy feta dressing steals the show in this protein-rich salad, which makes a perfect lunch or a quick and easy dinner. While you can buy feta cheese that are already crumbling, we are happy to crumble our own fresh from the block for this salad. We prefer the slightly sharper taste of sheep’s milk feta, but the cow’s milk feta works just as well.
