This asparagus crunch salad consists of delicate asparagus spears, a spicy lemon dressing, crumbled blue cheese and roasted walnuts. It is so satisfying and above all – structured! Much crispy crispy and taste.

Spring is the least preferred season, but asparagus makes it better!

I recently shared an asparagus salad with them and it included Brioche Croutons and all kinds of good things. This is similar, but easier. It is a bit classic and more traditional. It doesn’t have that many things at the top!

Let’s just say that.

So I did the same with asparagus! The asparagus is blanched as well as the green beans. Then it is covered with everything:

The roasted walnuts

And the lemon association

I think that this recipe with asparagus is such a hit because it is full of liveliness and crispy bite. The general flavors here are quite “normal” – as my family would say. Ha! Okay, without the blue cheese.

We have nothing too wild, nothing sharper, nothing excessively acidic or even too crispy. If you are freaked out over the blue cheese cheese, use feta instead. Or even Parmesan.

Basically everything is perfect and pleasant for the palate!

The other thing I love about this recipe is that you can really make the asparagus you want. I find it much more forgiving than the green beans. You can blanch it, but you can also fry it.

And you can also grill it, which is probably my number 1 to make asparagus.

Spring asparagus -crunch salad

This cold asparagus crunch salad is filled with so much taste and texture, including roasted walnuts, creamy blue cheese and a spicy dijon dressing. It is a fantastic spring supplement!

  • 1 pound Fresh asparagus spear ,, Circumcised wooden end
  • â…“ cup roasted walnuts, chopped
  • â…“ cup crumbled blue cheese cheese
  • Start with the asparagus. Prepare an ice pool – fill a large bowl of ice and cold water.

  • Bring a large pot of water to the boil. After cooking, add the asparagus and let it boil for 3 to 4 minutes (add an additional or 2 additional or 2 if the spear is thick!). Use a sieve to immediately transfer the spear to the ice pool. Let them cool in the bathroom for 5 minutes. Dab dry with a paper towel.

  • Put the asparagus on the plate and give it a slight scatter of salt and pepper. Drizzle the dijon dressing. Top with the crumpled blue cheese and the walnuts. Serve immediately. This tastes incredibly cold – like remains directly out of the fridge. It is also great at room temperature!

Lemon -Dijon -Dressing

  • Whisk the lemon juice and mustard in a bowl. Stir in the oil until the dressing is emulsified. Add a pinch of salt and pepper together with the herbs. Whisk to combine. All extras of it stay great in the fridge for a few days – it only has to be touched and stirred before use!
