This watermelon salad was inspired by a one that we tried in Tampa last summer. I liked the pistachios that were sprinkled about it. They offered the perfect crunch and the green color was beautiful with the bright red watermelon.
I am still obsessed with the shallot soaked with vinegar that I used on this watermelon salad with herb yogurt sauce, and it worked just as well here. The shallots are slightly inserted, so they are lively but less sharp, and a drizzle of the remaining vinegar brightens the entire salad.

How to choose your watermelon
Start with a great watermelon to make the best watermelon salad. It is a crap to cut into a watermelon and find pale, aromatic fruits. I am part of the Sugar Baby Marriage variety, which you can see in these photos. Sugar baby is almost firm from the outside, dark green, often almost core, with a wonderfully sweet taste.
If you select a watermelon, look for one, that is,:
- Difficult for its size
- Boring, not shiny
- Evenly shaped
- Dark green, with a yellow to orange “field stain”, which indicates that it has matured sufficiently on the vine (the more the yellow-or-colored color, the better)
Use for remaining watermelon

Watermelon salad
This classic recipe for watermelon salad has collapsed feta and fresh mint. Slightly pickled shallots and chopped pistachios make it astonishing! The recipe results in 6 to 8 side salads.
- Combine the cut shallot with vinegar and fine salt in a small bowl. To combine and put it in the fridge to light a cucumber, while preparing the remaining ingredients (at least 10 minutes).
- Spread the spiced watermelon over a large plate or a flat serving bowl. Assign the pickled shallot at the top and give the remaining vinegar over the salad. Sprinkle feta and pistachios over it.
- Drizzle the olive oil everywhere. End the salad with a pinch of fresh herbs and scaly salt. This salad is best enjoyed within an hour or two, but up to 4 days in the fridge.
Notes
Prepare in advance: Since watermelon begins with salt according to the inconconto to get moisture into contact, it is best to arrange the spiced watermelon over a plate and keep everything separately until it is shortly before serving. Or wait at least until it’s time to serve.
Make it milk -free/vegan: Leave out the feta. You may like a few roughly chopped Kalamas in his place.
