With an apparently unshakable position in first place under summer salads, you will find sure many Mayo-based pages among the spreads that you meet this season. But as a refreshing alternative to potato and makkaroni stands, this mayo-free crispy kohlrabi and Apple salad hold its own.
Kohlrabi is a member of the same family as Brussels sprouts and cabbage, and how it is served delicious. You can find both purple and green varieties; Either works here. Kohlrabi is mild and crispy, with a texture slightly softer than that of the apple in this salad. I love it raw, but it can also be roasted or grilled.

Tips for making this salad
- No Kohlrabi? No problem: If you cannot find Kohlrabi, replace a second medium -sized apple (a Granny Smith offers a sour taste contrast to the honeycrisp), a crispy pear or a cup of raw Brussels sprouts that are cut thinly.
- Make a bigger batch: If you are Add ingredients (and do not simply replace), double the dressing and stir it until the salad is covered, but hold it out before liquid pelvis on the bottom of the bowl.
- Buy the candied nuts: You don’t have to make candied nuts to enjoy this salad. Most grocery stores, including Joe’s Trader, carry candied pecans or walnuts.

How can I make my 5-intreated crunchy kohlrabi and apple salad
For four portions you need:
- 1 medium kohlrabi (approx. 8 ounces), leaves and stems, pulled off, peeled
- 1 middle honey war or other crispy apple
- 1/2 cup of crushed cheddar cheese
- 1 tablespoon of lemon juice
- 1 tablespoon of honey
- 3/4 teaspoon of kosher salt and more if necessary
- 1/4 teaspoon of freshly ground black pepper and more if necessary
- Canded pecans or walnuts, chopped, optional
Cut the peeled Kohlrabi and put Apple in matchsticks. You should have about 2 cups each. Combine the kohlrabi and apple in a medium -sized bowl together with the crushed cheddar.
Whisk lemon juice, honey, salt and pepper in a small bowl until they are fully incorporated. Add the dressing into the salad and throw it evenly coated. Taste with more salt and pepper, with the candied nuts when used and serve.
Store the remains in an airtight container in the refrigerator for up to 2 days.

Simple recipe changes
You can create many variations of this salad if you want:
- Use pear instead of (or in addition to the) apple or kohlrabi.
- A handful of fresh herbs – like chives or dill – is nice.
- A small handful of dried fruits such as raisins, chopped apricots or data can add some softness if this is your speed
- I Love With a funky blue cheese like Gorgonzola instead of the Cheddar.
