It is difficult to resist, colorful anchor tomatoes when I see them on the farmers’ market, but sometimes I buy so many, I don’t know what to do with everyone. This heb -tomato salad solves this problem in a delicious way. A simple summer tomato salad made of Kalamata olive, red onions, extra virgin olive oil and garden fresh basil is my husband’s recipe and it has become my favorite methods of eating tomatoes. We serve this as a side dish or for lunch with a nice crispy bread like my homemade sourdough bread.

Combine onions, olive oil, salt and pepper in a bowl. Let it marinate for about 5-10 minutes.

Cut the tomatoes into slices and arrange on a plate.
