I went back and forth because I put the word “healthier” in the title of this recipe, because healthy is a very subjective word. My health is not healthy and vice versa. But for me it is healthy to eat more vegetables. And since this broccoli cheddar soup is loaded with more vegetables than the typical soup, I go into it. It is still loaded with cheese, which some people do not consider healthy (especially those in the Paleo community), but I’m currently with cheese clown, so we are here. And since I am particularly selfish and make recipes that I want to eat, especially since I eat them after creating them, Cheddar cheese is under in this case. But don’t worry if cheese does not go back to clown with you, you can always use a milk -free alternative, as there is about a million out there today.

Do I want this to be served in a bread bowl, as I used to get it in a place called Spoons? Yes. But a normal bowl has to do it for the time being, because I have no gigantic sourdough bread to give up. But if you do this, you should totally put this in a bread bowl. Nothing is better than scratching the edges of a bread bowl while ending your soup. That is … if you think bread is healthy. Do you see how I got back to it? This is how they book, my friend.

Healthier Brokkoli -Cheddar soup
- Preparation time: 15 minutes
- Cooking time: 25 minutes
- Total time: 40 minutes
- Yield: 5– –6 Portions 1X
- 2 tablespoons Butter or olive oil
- 1/2 Yellow onion, chopped
- 4 Cloves of garlic, cut
- 1/4 teaspoon Red pepper flakes
- Salt to taste (during the entire cooking)
- 32oz Chicken bone broth
- 16oz Frozen cauliflower flowers
- 1/4 cup Gluten -free flour
- 10oz Broccoli flowers
- 8oz Freshly grated sharper cheddar cheese (or milk-free alternative)-leave
- 1/2 teaspoon black pepper
- 2 tablespoons Heavy cream (or coconut cream)
- Place a large pot over medium heat. Add the yellow onion and cook for about 5 minutes until it is translucent. Then add the garlic, red pepper flakes and a pinch of salt. Cook for another 3 minutes until the garlic becomes fragrant.
- Add bone broth, cauliflower, gluten -free flour and another heavy pinch of salt. Mix and cover to bring to cook. After cooking, reduce the heat and use a immersion to mix the soup until they are silky. Taste to see if the soup needs more salt.
- Increase the heat to medium and add the broccoli. Cover and let it boil for another 5 minutes.
- Finally add the Cheddar cheese and black pepper. Mix until the Cheddar cheese has melted into the soup and then finally stir in the heavy cream. Serve with a little remaining cheese!
