This grilled summer salad is one of my new favorite snacks! Satisfying, delicious and easy to share, it is a great simple dish for a party and another option to prepare a sandwich.
Welcome to your new favorite lunch!
Or snack. Or app. Even a party water! Basically, her new preferred way of consuming grilled salmon is. My Sommerlachs spread is incredible, full of red peppers, fresh herbs, yogurt, lemon, green onions and much more.
Leave it on a sandwich, draw on toast, serve it with crackers or crudités. The options are endless for this baby and I can’t wait to tell you about it.
Now this recipe was born out of me when I had a lot of left -wing grilled salmon on a Monday afternoon. I did it for dinner on Sunday evening and we went to the pool on Monday. I opened the fridge to prepare a few snacks and spotted the entire remaining salmon. I immediately grabbed a few other ingredients and had a delicious salmon within a few minutes, which we enjoyed all afternoon.
This was a big deal because I generally don’t like salad salad. And when I say salad I mean the way based on Mayo and is creamy and how tuna salad serves. I don’t know, but it’s not my thing. And I like tuna in this way.
But something hit me this morning and I knew that I had to spread it. I had Pita chips, cucumbers and carrots as well as roasted sourdough for sandwiches.
Oh my God. New summer snack unlocked. This was a dreamy hit – so fill and satisfactory and light. Not excessively creamy or wet, but made with just enough creaminess to bring it together.
And the grilled salmon! Well, this smoky taste has really exaggerated things.
This has become a staple for us in the few weeks now, since I made it for the first time. This is huge, because things have to be really interesting and tasty to expand our summer snack situation!
Here is what goes in:
Grilled salmon
Roasted peppers
A little mayo
A simple green yogurt
A drop of dijon
dill
Green onions
chives
lemon
Crumbled feta cheese
Mix everything together, crush it with a fork – keep the chunk of salmon as big or scaly as you want – and taste.
It’s easy, a nice little healthy snack and a few new opportunities to consume remains.
And the best thing about it is that if you use left -wing salmon (my preferred way to do this) – do this in just a few minutes!
Yay summer.

-
Note: This is the easiest to do if you have salmon left! But in the event that you don’t do it, start grilling it.
-
Heat your grill for the highest setting.
-
Season the salmon everywhere with salt and pepper and the garlic powder. Place the salmon on the grill and close the lid. Grill for 3 to 4 minutes, then turn over for 2 to 3 minutes and grill until it is cooked. Remove the salmon and let it cool down. Flake it with a fork until it is in pieces.
-
Mix yogurt, Mayo and mustard together in a bowl. Add the salmon, peppers, onions, feta, dill and chives. Taste and season with a little more salt and pepper (this is why it is determined how seasoned your salmon is at the beginning).
-
Once made, this stays great in the fridge for a few days! Serve with crackers, croissants or salad cups, in sandwiches, pita and more.
Definitely a favorite forever!
