I am looking forward to bringing the corn season every summer -to bring to sweet, juicy fresh corn and brings memories of Backyard grilling with my family. In our region there was a unique type of corn called “Taber Mais”, which was as sweet as sweets and hardly needed butter (although we would of course still be passed on with dedication).
One of my favorite methods to enjoy this summer money is so elote. I remember the first time when I tried this juicy, spicy, grilled corn court on a family trip to Mexico. I immediately fell in love with the combination of corn of sugar, salty cheese and spicy tajín, all of which were brought together with a creamy, pigeon dressing. While I love gnawing on a corn on the cob, my husband prefers the kernels from the Kobsters, so I started to make the salad version of elote served at home in a cup.
I was recently invited to a summer spot luck and decided to fit my favorite corn court in a pasta salad to feed a lot. I knew that I was able to make a few simple adjustments without losing the essence of the original court.

What kind of pasta to use
My favorite noodle shape for pasta salad is quadry, Spiralal Cavatappi. It has exactly the right amount of corners and angles to stick to their favorite associations and sauces. I like to use the Goodles brand pasta for a small protein and fiber in my dishes (you call your cava pappi Loopdy loos), but I will pick up often Brand Delallo as well as.
If you think of pasta for your pasta salad, look for options with combing and grooves to hold onto the sauce and keep staying away from smooth, long pastes such as spaghetti or angel hair. I like to use Rotini, Penne, Fusilli or Farfalle (sheet) if I don’t have a cava pappi on hand.
Make it your own
- Add a little color with quartered cherry tomatoes
- Take it sharp by adding a few chopped fresh or pickled Jalapeños
- For a bit of crunch, I love to cover my salad with crispy fried onions (the way you would insert into your casserole with green beans!)

8 Ounce Cavatappi pasta

2 teaspoon Olive oil outdoor virgin

2 Cup fresh or frozen Corn (thawed when he is frozen)

2 limesPlus limestone wedges for serving

1/2 cup mayonnaise
-
2 teaspoon Tajín Or another spice of chili lime, divided
-
3 Green onionschopped
-
1/2 cup Plus 2 tablespoon roughly chopped Fresh corianderdivided

1/3 cup Plus 2 tablespoon crumbling Cotija cheeseshared and more to garnish

Cook the pasta:
Bring a large saucepan with heavily salted water to boil over strong heat. Cook the pasta until Al Dente according to the instructions of the pack. Drain and rinse the pasta with cold water until it reaches room temperature.

Cook the corn:
In the meantime, heat the olive oil in a pan at medium to high heat. As soon as it is hot, add the corn and cook on a half way until the corn of 6 to 8 minutes is slightly charred. Let cool slightly.
Simple tip!
You can also have left -wing grilled corn (cut off) and skip this step.

Do the dressing:
Zest a lime, then halve and juice together with the other lime. Whisk the mayonnaise, the lime shell, the lime juice and 1 teaspoon of the Tajín spice in a medium -sized bowl.

Put together and serve:
Combine the chilled pasta, corn, green onions, 1/2 cup of coriander and 1/3 cup of Cupija cheese in a large serving bowl. Pour the dressing over the pasta and mix to coat them. Set taste with salt and pepper as needed.
Top with the remaining coriander, Cotija and Tajín and immediately with lime carved or serve in the fridge for up to 6 hours.
Store the remains in an airtight container in the refrigerator for up to 5 days.
