If a smoothie like summer could taste, it would be! This milk -free, gluten -free, vegan smoothie is simply delicious and consists of tires mango, plums, apricots and peaches or nectarines.
Summer (and late spring) is my favorite season when it comes to eating seasonal fruit and vegetables. I mean what can be better than bite in a juicy nectar or a plum?
I had a super mature sugar mango on my counter that was ready to eat and decided to use it in my morning smoothie together with some other fruits in my fruit basket. Plums, nectarines and apricots (peaches would also work). Instead of using milk, I wanted to keep it milk -free, so I used Bai5 Molokai Coconut antioxidant infusion Instead (I am obsessed with this stuff!). If you are a fan of coconut as I am, but do not interest the taste of coconut water, this is a great alternative and even tastes directly out of the bottle. In fact, I love this stuff so much (you can buy it at Costco).
This recipe makes two large smoothies. If you want to add a protein push, you can also throw in hemp seeds or chia.
Yield: 2 Portions
Serving size: 1 1/2 cups

Combine all ingredients in the mixer with the exception of the ice cream and mix up for 30 seconds until you are well combined.

Add the ice cubes and mix them up for 10 to 20 seconds until they are chilled and crushed.

Divide between two glasses and garnish with mint. (optional)
