This recipe for sweet potato -haash is roasted in the oven! It is a hearty side dish or breakfast component. Serve it with eggs and much more. The recipe results in 4 to 6 portions.

  1. Preheat the oven to 425 degrees. Line a large, surrounded baking sheet with parchment paper so that the vegetables don’t stick.
  2. Combine the prepared potatoes, peppers and onions. Drizzle the olive oil over the vegetables, then sprinkle the garlic powder, the optional chilli powder, the salt and several turns of freshly ground black pepper. Throw until you are evenly covered with olive oil and do not remain powdery stains from the garlic powder. Assign them in a uniform layer on the sheet (it is okay when the vegetables are fixed, but when the vegetables are on top of each other, they must divide it over two pans, both of which are lined with parchment paper).
  3. Bake until the vegetables are tender and deep golden on the edges, about 55 to 65 minutes and stir every fifteen minutes for even browning.
