3-Ingredient Baked Barbecue Chicken Recipe (15 Minutes)

One of my very first jobs was working at the pickup counter at a local pizza restaurant. It was a “high-end” pizzeria that sold pizzas with unique topping combinations such as fried potatoes and rosemary and shrimp and pesto.

One of our most popular pizzas was the BBQ Chicken with barbecue sauce, chicken, Gouda cheese and red onions. It was one of my favorites too. Something about the combination of the sweet and spicy BBQ sauce paired with the smoky creaminess of the Gouda cheese made it undeniably delicious.

I liked these flavors so much that I wanted to recreate them but use chicken as the main ingredient instead of pizza dough. I start with boneless, skinless chicken breasts and pound them to an even thickness. Next I used my favorite BBQ sauce; Since it represents a big taste factor, choose a good product.

Smoked Gouda gives the pizza a smoky, melty and cheesy flavor. Instead of red onions, I opted for thinly sliced ​​scallions, which provide great onion flavor but are less bitter and spicy. I knew I had a winning dish.

Tips for making 3-ingredient baked BBQ chicken

  • I know it’s hard to tell what’s in these packages of chicken, but look for a package with 3 or 4 breasts that weigh about 1 1/4 to 1 1/2 pounds. You can use the larger chicken breasts, but you will need a larger baking sheet or baking dish to hold them.
  • It’s important to use only the tastiest barbecue sauce and cheese. They add flavor to your dish, so go for the good ingredients.
  • The good thing about this recipe is that you can easily double it and feed a crowd. Use two baking sheets and rotate them from the top rack to the middle rack (and vice versa) halfway through cooking.

  • 4 Boneless, skinless chicken Breastsabout the same size (approx 1 1/2 pound in total)

  • Salt and pepper to taste

  • 4 ounces smoked Gouda cheeseshredded

  1. Preheat oven:

    Preheat the oven to 200°C and line a baking tray with baking paper.

  2. Prepare the Chicken:

    Pound the chicken breasts to an even thickness, about 1/3 inch. Place in a single layer on the prepared baking sheet and season with salt and pepper. Cover each chicken breast with barbecue sauce and then top with grated cheese.

  3. Cook and serve:

    Bake for 8 to 10 minutes until the internal temperature reaches 160°F, then cover with foil and let rest for 5 minutes, making sure the temperature rises to 165°F before serving.

    Garnish with spring onions and serve.
