Search for artichoke hearts that are packed in water or use thawed frozen artichokes in your place. Delicate salmon pieces receive a sweet and crispy coating thanks to the sweet and hearty teriyaki glaze in this salmon rice shell. Since the glaze is sweet and can burn sugar easily, it is best to roast the salmon pieces without it and then apply the glaze to cook only a few minutes under the grill. We love crispy cucumbers and creamy avocado as coverings, but we are welcome to add all toppings that you like best for your own spin for this simple meal. If you cannot find Sriracha Mayo, you can make your own by mixing Mayo and Sriracha to your preferred spice level.

These shells would be excellent make-a-head lunch. Pack the avocado mixture separately and give a little water to dilute it as required.
