This refreshing salad is a favorite in summer that offers a cool contrast to the hotter dishes that it often accompanies. Chinkian vinegar, a Chinese black vinegar with a rich, spicy depth, gives the dressing complexity, but rice vinegar will work well in its place. This comes together in less than an hour and offers a great taste with a minimal effort.
Cucumber, tomato and avocado salad with lemon peel vinaigrette

This salad is thrown with a citric vinaigrette vinaigrette and is light, lively and perfectly balanced.
