This summer urbis ravioli is like traditional ravioli with a simple exchange: it uses thin pumpkin slices that are wrapped around the filling instead of pasta. These brown butter and sage -oriented ravioli have an autumn twist with a creamy pumpkin and goat cheese filling. The pumpkin slices are cut with a mandolin. If you don’t have any, a vegetable peeler also works. Make sure the slices are very thin and supple enough to wrap yourself around the filling.

Instead of being cooked, a package of Gnocchi one of our favorite products bought in the shop is a bit of bacon fat browned and crispy. Then the sauce (made from dosing pumpkin and another great comfort product) is prepared directly in the same pan, so that the cleaning is also minimal. Serve with a simple green salad to bring together a simple dinner in 30 minutes.
